Carrots

A colorful harvest hiding underground

Carrots are root vegetables, storing energy in the thickened root beneath the soil. Although orange carrots are most familiar, varieties also come in purple, yellow, red, and white.

Carrots grow especially well during the cooler months in North Texas, although patience is required while the roots develop underground.

Growing Carrots in North Texas

Carrots prefer loose, well-drained soil and steady moisture.

  • Planting: Sow seeds directly in the garden during fall or late winter.

  • Spacing: Thin seedlings to approximately 2–3 inches apart.

  • Soil: Loose soil without large rocks or hard clumps.

  • Water: Keep the soil surface consistently moist during germination, then water deeply as roots grow.

  • Growing season: Fall through spring.

Carrot seeds are small and often slow to germinate, sometimes taking two weeks or longer. Keep the soil surface from drying out while waiting for seedlings.

Carrots generally do not transplant well because disturbing the young taproot often causes misshapen roots.

What to Look for in the Garden

Carrot foliage looks feathery and delicate, almost like parsley.

Most of the crop grows underground, so the leaves offer only part of the story. As carrots mature, the tops of their roots sometimes become visible at the soil surface.

Carrots belong to the same botanical family as parsley, dill, and celery.

Harvesting Carrots

Check the expected maturity date for the variety and look for shoulders developing near the soil surface.

Gently loosen the soil before pulling to avoid breaking the roots. Larger carrots aren't always better. Younger roots are often especially tender.

Remove the leafy tops soon after harvesting to prevent moisture loss from the roots.

From Garden to Kitchen

Brush off loose soil and refrigerate carrots without their tops in a produce bag or covered container. Properly stored carrots often keep for several weeks.

Scrub thoroughly before eating. Peeling is optional.

Carrots are delicious raw, roasted, steamed, or added to soups and stews. Tender, healthy carrot greens are also edible when properly identified and washed.

The secret to straight, well-developed carrots starts before planting. Prepare the soil deeply, remove rocks and clumps, and thin crowded seedlings early. Give each root room to grow.
